Israeli Stuffed Pepper Recipe With Beef

Ingredients for Beef Stuffing

6 bell peppers (variety of colors)

Vegetable oil 

8 cloves of garlic

2 chopped onions

1 pound of ground beef

1 bunch of cilantro (save a small amount for the sauce)

3/4 cup of rice

1/2 tablespoon of salt

1/4 teaspoon of black pepper

1/4 teaspoon of baharat (Middle Eastern spice blend)

Ingredients for Stuffed Pepper With Beef Sauce

6 tomatoes

1 chopped onion

Veggie oil

Salt (to taste)

Crushed red pepper flakes (to taste)

1/4 teaspoon crushed ginger

Small bunch of cilantro

Cooking Instructions for Beef Stuffing

  1. Sautee the garlic and onion with a small amount of oil in a frying pan. Add the beef and cilantro (leave a bit of cilantro for the sauce)
  2. When the beef turns brown, mix in the rice, salt, baharat, and black pepper 
  3. Add 1/2 cup of water, and bring to a boil
  4. Lower the heat, cover the pan, and simmer the beef and rice mixture for 6-7 minutes
  5. Cut the tops of the peppers off, clean out the seeds, and set aside the pepper tops
  6. Fill the peppers with the beef and rice mixture, leaving a bit of room at the top of each pepper

Cooking Instructions for Sauce

  1. Blend the 6 tomatoes in a blender or food processor, and strain the blended tomatoes
  2. Sautee 1 onion with small amount of oil in an oven safe pot (cast iron works great!)
  3. Add the blended tomatoes to the pot, along with 1 cup of water, salt, red pepper flakes, and ginger
  4. Bring the blended tomato sauce to a boil, and add your remaining cilantro
  5. Pour 2 spoons of the tomato mixture into each pepper, cover the peppers with their tops, and place the stuffed peppers in the pot
  6. Cover the pot, and cook on the stove on a low flame for 30 minutes
  7. Preheat your oven to 400 degrees
  8. Transfer the pot of stuffed peppers with beef into the oven, and bake for 30 minutes
