What is Huevos Rancheros?

Huevos rancheros is a traditional Mexican breakfast dish. It originated in rural areas of Mexico and has since become popular not only in Mexico but also in many other parts of the world. The name “huevos rancheros” translates to “rancher’s eggs” in English, reflecting its origins as a hearty breakfast enjoyed by farmers and ranchers. The dish typically consists of fried eggs served on a bed of tortillas and topped with salsa, beans, cheese, and other flavorful ingredients. 

Try this easy and delicious huevos rancheros recipe at home:

Ingredients

  • 4 corn tortillas
  • 4 large eggs
  • 1 cup of black beans (cooked)
  • 1 cup of salsa (store-bought or homemade)
  • 1/2 cup of shredded cheddar cheese
  • 1/4 cup of chopped fresh cilantro
  • 2 tablespoons of vegetable oil
  • Salt and pepper to taste
  • Optional toppings: sliced avocado, sour cream, sliced jalapeños
  • Makes 2 servings

Instructions

  1. Preheat your oven to 350°F (175°C). Place the corn tortillas on a baking sheet and lightly brush both sides with vegetable oil. Bake in the oven for about 10 minutes or until they are crispy. Remove from the oven and set aside.

  2. In a medium saucepan, heat the black beans over low heat until warmed through. Add salt and pepper to taste, and keep warm.

  3. In a large non-stick skillet, heat the remaining vegetable oil over medium heat. Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny. Season the eggs with salt and pepper.

  4. While the eggs are cooking, warm the salsa in a small saucepan over low heat.

  5. To assemble the huevos rancheros, place a crispy tortilla on a plate. Spread a spoonful of black beans over the tortilla. Place a cooked egg on top of the beans. Spoon some salsa over the egg and sprinkle with shredded cheese and chopped cilantro.

  6. Repeat the process for the remaining tortillas, eggs, and toppings.

  7. Serve the huevos rancheros immediately with any additional toppings you desire, such as sliced avocado, sour cream, or sliced jalapeños.
